Mashed Potato Taco Casserole

Potato Mixture
  • 1 (20-ounce) package refrigerated prepared mashed potatoes
  • 2 ounces (1/2 cup) cheddar cheese, shredded
  • 1 egg
Beef Mixture
  • 1 pound ground beef
  • 1 medium (1/2 cup) onion, chopped
  • 1 (16 ounce) can cream-style corn
  • 2 T. taco seasoning mix
1. Heat oven to 375°. Stir together mashed potatoes, cheese and egg in medium bowl. Set aside.

2. Cook ground beef and onion in 10-inch skillet over medium-high heat, stirring occasionally, until beef is browned (4 to 5 minutes). Stir in corn and taco seasoning.

3. Spoon hot beef mixture into ungreased 8 or 9-inch square baking pan; top with potato mixture. Bake for 25 to 30 minutes or until heated through.
