Jiffy Chicken & Rice Gumbo

  • 1 6.9 oz package Rice-a-Roni, chicken flavor
  • 1 green pepper - coarsely chopped
  • 2 T butter
  • 1 lb boneless, skinless chicken breasts, cut into 1" pieces
  • 1 14.5 oz can tomatoes, canned
  • 1 tsp Creole seasoning
  • 2-1/4 cups water
In large skillet over medium heat, saute rice-vermicelli mix and bell pepper with margarine until vermicelli is golden brown.

Slowly stir in 2- /4 cups water, chicken, tomatoes, Creole seasoning and special seasonings from the packet in the Rice-a-Roni package. Bring to a boil.

Reduce heat to low. Cover; simmer 15-20 minutes or until rice is tender.

Serves 4.


NOTE:
Creole seasoning can be made by grinding together 1/2 tsp cayenne pepper, 1/4 tsp dried oregano, 1/4 tsp dried thyme.
